蔥油餅 手工自製蔥油餅

食材 (4 人份)
中筋麵粉400公克
滾水220C.C.
冷水50c.c
鹽4公克
青蔥醬適量


作法
1 麵粉混合鹽後,滾水沖入,用筷子攪拌,成為雪花麵片!

2 在加入冷水調整,可加入50-100C.C.的水,自行增減!(和麵粉吸水度有關).我這次加50C.C.

3 揉合成麵團,太黏手可下油操作!或直接放入抹油的塑膠袋內,冷藏24小時再操作(建議)!

4 取出分成4份,每份橄成略薄長方形,表面抹上青蔥醬,卷成長條,盤起來(看影片)!休息至少30分鐘後,橄平、下鍋乾煎!

5 切片、擺盤既可上桌!

6 沒立刻吃可一份一份用袋子裝起來,袋內記得倒點油.放冷凍!要吃前先放軟,再放室溫醒30-60分鐘!
