超級簡單自製千層派皮

[b]食材[/b]
低筋麵粉150克
高筋麵粉50克
無鹽奶油150克
鹽一小搓
冰水4大匙

[b]作法[/b]
1 無鹽奶油切一公分立方放冷凍至少二小時,直接在桌面上操作,跟麵粉.鹽混合均勻(奶油越冰千層越酥)

2 先用手抓麵粉在抓奶油(才不會黏手),先把奶油捏扁

3 雙手用像在玩沙子的方式搓洗.混合成砂粒狀.拿刮刀把底部的麵粉翻上來,用刮刀切拌,形成粉包油的狀態(有些大顆粒奶油沒關係.不用全部很細,這就是千層成功的關鍵)

4 分次加入冰水(一定要冰水~一定要冰水~一定要冰水~因為很重要所以說三次)拿刮刀把底部的麵粉翻上來,用刮板以按壓的方式混合,絕對不要去搓揉麵團

5 配方中的水分可以不用全部加完,用手抓起麵團可以捏成團即可,不要再加水份,水份越少越酥

6 把粉團包含所有粉屑放到保鮮膜內,整理成長方形,放冰箱冷藏一小時

7 取出冰硬的麵團,上面再蓋一張保鮮膜,用擀麵棍用壓的方式伸展開來,再轉90度一樣用擀麵棍用壓的方式伸展開,然後再橄成厚薄一致的長方形

8 直接提起保鮮膜折起來做第一次的三折

9 再折起另一邊,完全不會弄髒手

10 轉90度再一次三折

11 用保鮮膜封好冷藏一小時即可開始烘焙
