菜譜做法:

1.混合麵包原料,揉至擴展階段,即:撐開麵糰有稍厚的薄膜,薄膜有韌性,破洞邊緣處成鋸齒狀;

2.表面蓋保鮮膜,室溫下發酵至2倍大,即:手沾乾粉在麵糰中間戳個洞,洞口不塌陷不回縮;

3.排氣,分割成8等份,蓋保鮮膜鬆弛15分鐘;

4.擀長至20cm,捲起,封口處一定要捏緊,避免烤的時候抻開;

5.將底部沾料混合備用,模子底部塗油;

6.將卷卷從中間一切兩半,底部沾水,再沾一下混合好的底部沾料,等距離均勻的擺放在烤盤中;

7.進行最後發酵,發至體積長大2倍時取出;

8.表面刷油或蛋液,並往模子底部倒入適量的色拉油(油越多出爐時麵包底部越脆);

9.表面撒一層芝麻,入爐烤制;

10.出爐后立即在表面刷一層蜂蜜水(蜂蜜:水=1:1)。
